Cooking instructions

Cooking Directions: Spice it up with avocado and a sprinkle of lime juice!! Stove Top Without Tomatoes: 1. In a medium saucepan, bring 1 to 3/4 cups of water and 2 tablespoon of butter, margarine or oil to a boil. 2. Add rice, contents of seasoning packet and bring back to a boil. 3. Reduce heat to low and cover saucepan. 4. Simmer 15-20 minutes or until rice is tender. 5. Remove saucepan from heat. 6. Let saucepan cool for 5-10 minutes covered before serving. Stovetop With Tomatoes: 1. In a medium saucepan, combine rice with 2 Tablespoons of butter, margarine or oil. 2. Saute on medium-high until rice is golden brown. (about 1 minute). 3. Add 2 cups of water, a 14-1/2 oz. can of diced tomatoes, and contents of seasoning packet. 4. Stir and bring to boil. 5. Reduce heat to low. and cover saucepan. 6. Simmer for 15-20 minutes or until all water is absorbed and rice is tender. 7. Remove saucepan from heat. 8. Let saucepan cool for 5-10 minutes covered before serving. Microwave: 1. In a 1-quart microwave safe bowl, combine rice, and 2 Tablespoons of butter, margarine, or oil. 2. Microwave for 1 minute. 3. Stir in 2 cups of water, 10 oz. can of diced tomatoes, and contents of seasoning packet. 4. Microwave on high for 19-21 minutes uncovered, or until rice is tender and water is absorbed. (If needed cook 1-2 more minutes adding water). 5. Remove and let bowl cool 5-10 minutes before serving. Cook time may vary due to microwave. Meal Plan Idea: Enjoy with enchiladas & buttered zucchini.
