Cooking instructions
Season to taste. Heat 1 Tbsp oil HIGH. Add to pan, press to sear. Cook 3½min on MED-HIGH, flip. Cook 3min. Baste w/butter. Remove from pan, rest. Finish w/Cyprus sea salt.
