REDUCE HEAT TO MEDIUM; CLOSE AND COOK 3-6 MINUTES UNTIL THE INTERNAL TEMPERATURE IS 145F. THE INTERNAL TEMPERATURE SHOULD BE MEASURED BY A THERMOMETER. REMOVE FROM HEAT AND LET REST 5-10 MINUTES.
