Cooking instructions

For best results season with sea salt and freshly ground black pepper and oil the meat with approximately 1 tbsp. of vegetable oil which accommodates a high cooking temperature (don't oil the pan). Heat a frying or griddle pan (perfect for that chargrilled effect) to a high heat. Make sure you allow enough time for the pan to get hot as you want the steak to get evenly browned for optimum flavour. Sear the steak for 1 minute so that external surfaces are seared on all sides. For the perfect steak add rosemary, garlic, shallots and a knob of butter once seared. Lower the heat to medium-high and continue to cook for the following times, turning occasionally during cooking. Rare: 7-9 minutes; Medium: 9-11 minutes; Well-done: 14-16 minutes. Ensure product is thoroughly cooked and external surfaces are visibly seared on all sides. Always wash hands, all surfaces and utensils after handling raw meat. Unseal the pack and allow the steak to rest at room temperature for 20 minutes before cooking. Remove all packaging. Remember you can recycle the tray by simply peeling the film. Serving suggestions For a simple sauce try our Peppercorn Sauce. While the steak is resting separately, in the same pan melt 30g of butter and add half a finely chopped shallot. Cook until soft. Add 50ml of beef stock and 1 - 2 tbsp. of black peppercorns and bring to the boil for 2 minutes. Reduce the heat to medium and add 30ml of double cream and heat through until desired thickness is achieved. Once the steak is cooked allow to rest for 5-10 minutes covered with some aluminium foil. We promise it will be worth the wait, and it will ensure your steak is juicy, tender and succulent. Do not reheat. Lightly season with sea salt and freshly ground black pepper. Place under a preheated medium grill and cook for the times specified, turning occasionally during cooking. Rare: 8-10 minutes Medium: 10-12 minutes; Well-done: 14-16 minutes. Ensure product is thoroughly cooked and external surfaces are visibly seared on all sides.

Storage instructions

Keep refrigerated below 5degC at the bottom of the fridge. Once opened, use immediately. Suitable for freezing. Freeze by date mark shown and use within one month. Defrost thoroughly at the bottom of the fridge before use and use within 24 hours. Never defrost in a warm room. Do not refreeze once defrosted.
